(cake tastings are one of my favorites!) A good bakery will walk you through the selection process and help you select a cake that will fit your style, your budget and your venue. (Outdoor venues in warm weather can wreak havoc on buttercream.)
But, do you know what to do with that top tier to preserve it for your first anniversary? I talked to my friend, Sarah, at Homestyle Bakery and here is her advice. And what's even better? How To Preserve the Top of Your Wedding Cake:"The key to preserving the top of your wedding cake is to seal it
properly. The best way to do this is to do it in layers. First, you
should wrap the cake with a plastic wrap. Don't worry about messing up
the icing flowers or design. It's better to have a cake that tastes
good than to have the cake look as good as it did the day of the
wedding.
Once the cake is wrapped, place it back in the cake box so it does not
get damaged. Then, wrap the box with more plastic wrap. Depending on how cold
your freezer is, this may be enough of a seal. If you don't want to
take a chance, wrap the entire plastic-sealed box in a trash bag. This
is 3 layers of protection that is guaranteed to fight off freezer burn.
The day before your anniversary, unwrap the box and the cake and let it
thaw on the counter.
